I have to congratulate my good friend Martin Ureña Quiros owner of the Microbeneficio
“ La Chumeca”, for the excellent job that he is doing in the art of “Anaerobes coffee processes”.
Martin plays with the natural juices that the coffee cherries generate(honey, sugar, acids, and alcohol)
The process requires this special barrels and he has to control very carefully the humidity, times and temperatures of each barrel, in that way he will give the coffee beans the aromas and those exotics flavors that Martin is looking in each batch.
Congratulations Martin for all the great work in pro of the coffee industry.
